- Fresh Ingredients: Blended onions, garlic, and fresh peppers (optional).
- Salt
- Palm Oil or Vegetable Oil
- Bouillon Powder or Natural Flavor Enhancers
Instructions
Step 1: Boil the meat or fish with salt, onions, and spices. Once cooked, strain the stock and set it aside. This will be the liquid base of your cubes.
Step 2: Blend fresh onions, garlic, and peppers until smooth. If you prefer a dry mix, skip this step and focus on dried herbs and spices.
Step 3: Combine thyme, curry powder, ginger powder, onion powder, and any other spices you like. Add a bit of ground crayfish for an authentic Nigerian touch.
Step 4: Heat a small amount of oil in a pan. Add the blended fresh ingredients (if using) and fry for a few minutes to release their aroma. Gradually stir in the stock and your mixed spices. Let it simmer until it thickens. Adjust the salt to taste.
Step 5: Once the mixture cools slightly, spoon it into ice cube trays or silicone molds. This helps you portion out your seasoning easily.
Step 6: Place the molds in the freezer until the cubes harden. Once frozen, transfer the cubes to an airtight container or freezer bag. They can last for weeks in the freezer.
