Ingredients For Sealing and Glazing:

1 egg (beaten)

Instructions

1. In a large bowl, mix the flour, baking powder, and salt.

2. Add the cold butter cubes. Use your fingers to rub the butter into the flour until it looks like breadcrumbs.

3. Gradually add the cold water, a little at a time, and mix until the dough comes together. Don’t overwork it.

4. Wrap the dough in plastic wrap and chill in the fridge for about 30 minutes.

5. Heat the vegetable oil in a pan over medium heat. Add the onions and sauté until soft.

6. Add the minced meat and cook until browned. Break it into small pieces as it cooks.

7. Toss in the diced potatoes, carrots, thyme, and curry powder. Stir well.

8. Add the seasoning cube, salt, and pepper. Pour in a little water (about 1/4 cup) and let the vegetables cook until soft.

9. Mix the flour with a bit of water to make a paste. Stir this into the filling to thicken it. Let it cool.

10. Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.

11. Roll out the chilled dough on a floured surface to about 1/8-inch thickness.

12. Use a round cutter or a small bowl to cut out circles from the dough.

13. Place a spoonful of filling in the center of each circle. Be careful not to overfill.

14. Fold the dough over the filling to make a half-moon shape. Press the edges together with your fingers, then seal with a fork.

15. Place the meat pies on the baking tray. Brush the tops with the beaten egg for a golden finish.

16. Bake the meat pies in the preheated oven for 25–30 minutes, or until the tops are golden brown.

17. Remove from the oven and let them cool slightly before serving.
