Delicious Lamb Stew Recipe

If you are like me, you will know that there are days when you just feel like eating something totally different from the usual beef, chicken or turkey. Lamb shines through perfectly on these days! And when you get your lamb fully cooked in delicious stew, oh yummy! It would hit the right notes in every eater at your family dinner, weekend treat etc. So, if you’re craving something delicious, full of flavour, and perfect for sharing with your family, lamb stew is the ultimate choice. 


Why Lamb Stew?

Lamb stew is rich, tender, and bursts with deep flavors every time. The lamb soaks up the spices and creates a warm broth that you can pair deliciously with rice, yam, potatoes, or even crusty bread. Also, making this stew allows you enjoy the richness of lamb plus the healthiness of fresh vegetables and spices.


What You’ll Need

Here’s a list of ingredients to make the perfect lamb stew. Most of these can be found at My Sasun African Market:

  • 1 kg of lamb (cut into chunks)
  • 2 tablespoons vegetable oil
  • 1 large onion (chopped)
  • 3 garlic cloves (minced)
  • 1 tablespoon ginger (grated)
  • 3 fresh tomatoes (blended) or 1 can of diced tomatoes
  • 2 tablespoons tomato paste
  • 2 medium carrots (sliced)
  • 2 medium potatoes (cut into chunks)
  • 1 green bell pepper (chopped)
  • 1 cup green peas (optional)
  • 4 cups beef or vegetable stock
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 2 bay leaves
  • Salt to taste
  • 1 scotch bonnet or chili pepper (optional, for heat)

 

Instructions

  • Season the lamb chunks with salt, black pepper, and a little paprika.
  • Heat oil in a large pot over medium-high heat. Sear the lamb pieces until browned on all sides. Remove and set aside.
  • In the same pot, add the chopped onions, garlic, and ginger. Sauté until they become fragrant and the onions are translucent.
  • Add the tomato paste and let it cook for about 2 minutes to reduce the tanginess.
  • Stir in the blended or canned tomatoes, curry powder, thyme, and paprika. Allow this mixture to simmer for 5–7 minutes, keep stirring.
  • Return the seared lamb to the pot and mix well with the tomato base.
  • Add the stock and bay leaves, then bring the stew to a boil. Reduce the heat to low, cover, and let it simmer for about 40 minutes to an hour.
  • Toss in the carrots, potatoes, and bell peppers. If you’re using green peas, add them during the last 10 minutes of cooking.
  • Simmer until the vegetables are tender and the lamb melts in your mouth from a small bite. Oh, yummy! 
  • Check the seasoning and add more salt, pepper, or spices if needed. Remove the bay leaves before serving.

How to Serve Lamb Stew

This lamb stew is incredibly versatile. You can enjoy it with:

  • Steamed rice
  • Mashed potatoes
  • Boiled yam or plantains
  • Fresh bread to soak up the broth

Note: 

  1. Lamb tastes best when cooked slowly, so, cook on low/medium heat.
  2. Use beef or vegetable stock instead of plain water for a richer taste.
