What You’ll Need

- 1 kg of lamb (cut into chunks)
- 2 tablespoons vegetable oil
- 1 large onion (chopped)
- 3 garlic cloves (minced)
- 1 tablespoon ginger (grated)
- 3 fresh tomatoes (blended) or 1 can of diced tomatoes
- 2 tablespoons tomato paste
- 2 medium carrots (sliced)
- 2 medium potatoes (cut into chunks)
- 1 green bell pepper (chopped)
- 1 cup green peas (optional)
- 4 cups beef or vegetable stock
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 2 bay leaves
- Salt to taste
- 1 scotch bonnet or chili pepper (optional, for heat)
Instructions
- Season the lamb chunks with salt, black pepper, and a little paprika.
- Heat oil in a large pot over medium-high heat. Sear the lamb pieces until browned on all sides. Remove and set aside.
- In the same pot, add the chopped onions, garlic, and ginger. Sauté until they become fragrant and the onions are translucent.
- Add the tomato paste and let it cook for about 2 minutes to reduce the tanginess.
- Stir in the blended or canned tomatoes, curry powder, thyme, and paprika. Allow this mixture to simmer for 5–7 minutes, keep stirring.
- Return the seared lamb to the pot and mix well with the tomato base.
- Add the stock and bay leaves, then bring the stew to a boil. Reduce the heat to low, cover, and let it simmer for about 40 minutes to an hour.
- Toss in the carrots, potatoes, and bell peppers. If you’re using green peas, add them during the last 10 minutes of cooking.
- Simmer until the vegetables are tender and the lamb melts in your mouth from a small bite. Oh, yummy!
- Check the seasoning and add more salt, pepper, or spices if needed. Remove the bay leaves before serving.
