1 teaspoon vanilla extract
A pinch of salt

How to Make Tapioca Pudding
- Soak the Tapioca Pearls: Start by soaking the tapioca pearls in water for about 30 minutes. This helps them cook faster and ensures they turn soft and chewy. After soaking, drain the water.
- Cook the Tapioca: In a medium-sized saucepan, combine the soaked tapioca pearls, milk, and a pinch of salt. Bring the mixture to a gentle simmer over medium heat while stirring frequently. Be patient—it takes about 10-15 minutes for the tapioca to soften and thicken the milk.
- Temper the Egg: In a small bowl, whisk the egg with the sugar until well combined. Slowly add a few spoonfuls of the hot milk mixture to the egg mixture, whisking constantly. This prevents the egg fro m scrambling when added to the pudding.
