Roasted plantain, also known as bole, is a classic Nigerian street food. It’s smoky, slightly sweet, and perfect with pepper sauce, groundnut, or even grilled fish. While it’s traditionally roasted over an open fire, you can get the same delicious taste right at home using your oven.
Here’s how to make perfect bole in an oven that will leave it crispy on the outside, soft on the inside, and full of flavor.
Ingredients
Directions
Set your oven to 400°F (200°C) and allow it to heat up while you prepare the plantains.
Wash the plantains and pat them dry.
Peel them by making a shallow cut along the length and pulling off the skin.
For a slight crisp, lightly rub a little vegetable or palm oil on the plantains.
Line a baking tray with parchment paper or foil.
- Place the plantains directly on the tray or on a wire rack for even heat circulation.
- If you like, sprinkle a little salt, ground pepper or seasoning for extra flavor.
Place the tray in the oven and roast for 20–30 minutes.
- Flip the plantains halfway through (around 10–15 minutes) to ensure even browning.
Recipe Note
For best results, use semi-ripe plantains for a firmer texture. Ripe plantains will be softer and sweeter.
How to Know When Your Roasted Plantain (Bole) is Ready
Your bole is done when:
The outside is golden brown with slight charring.
A fork easily pierces through, but the plantain is still firm.
What to Eat with Roasted Plantain
Groundnut (peanuts): The classic combo!
Pepper sauce: Spicy, tangy sauce with onions and palm oil.
Grilled fish: Just like the popular street food style.
Avocado: Creamy, healthy, and delicious.
